RAPS with new products for cooked cured products

Kulmbach, June 2019: cooked ham, smoked pork, Kaiserfleisch or pork knuckle are the classics of traditional cuisine. Due to their low fat content, these cured meats are also a perfect fit in the diet of increasingly nutrition-conscious consumers. When meat and sausage are served today, quality and ingredients are being taken more and more seriously. This is what RAPS has set for itself: With the latest generation of sprays for industry and trade, the company has committed itself to the further development of concepts that are as clean, sustainable and functionally convincing as possible. Thus, in addition to products for organic ham, a VLOG-suitable spraying agent for the industry was also developed.

The graded cleanness combination preparations from RAPS open up a wide range of different declaration options. In addition, the modular system developed by RAPS makes it possible to flexibly combine finely tuned spraying agents, as well as sheets and decorative spices, depending on the application and taste preference.

The compositions of the two ranges RA-LAK-Spritzmittel and LAK-TOP Würzungen set with a variety of interesting flavors such as BBQ, butter, coffee, Mediterranean, asparagus, umami, juniper or pickle appropriate culinary accents.

The spreadable LAK-TOP seasonings are added directly to the brine. The special thing about it: thanks to the separate dosage of spray and seasoning, the taste intensity can be set individually. By using the Restlake also a particularly economical small production of cooked ham specialties is possible. The decor spices finally provide the perfect look and the last taste kick. In addition to different classics with local or Mediterranean herbs bring Bacon, Rodeo, Colorado, Marengo or Samba not only color but also exotic flavor in the bar, while lemon or orange pepper and GTK asparagus stand for finesse.

In the foreground stands next to the round taste and appealing look but always the perfect degree of juiciness. The control of the pH is of great importance here, as it is crucial for the binding of water, the disc cohesion, the readiness for curing and above all for the shelf life of the cooked cured products. RAPS has paid particular attention to optimum functionality in the development of new liquid and spreadable sprays. In addition, RAPS experts will provide in-depth advice on cooking products, such as meat selection, cutting, yield, slice cohesion, brine and injection, injection, tumbling and shaping, heating and cooling. As of fall 2019, seminars on "Delicate and Juicy" will take place as well as a multi-day production seminar.
