Fine grinding in meat processing

Fine grinding, emulsification and homogenization are the particular strengths of the variable and powerful Handtmann Inotec grinding technology. A wide range of preliminary products, from liquid to viscous to hard, tough or fibrous components, are powerfully finely chopped, homogenized and emulsified. Classic applications include boiled and cooked sausage, cold cuts, meat-free boiled sausage alternatives, pickling brine preparation (meat-in-meat), rind/skin emulsions and, last but not least, pet food such as chunks in gravy, snack sticks and wet food. Perfect adaptation to the desired product is made possible by the modular, 1 to 5-stage cutting system with precise approach to the cutting position and automatic adjustment or by using the alternative SpeedSpin cutting system to optimize the degree of fineness and texture. In conjunction with the original Handtmann Inotec cutting tools, perfect results and long service lives are achieved with minimized wear. The perforated plates are available in low-rust special steel, tool steel or advanced quality with a specially hardened alloy to cover numerous areas of application. The process is easily controlled via the integrated controller, which enables the parameterization, monitoring and control of the shredding process and monitors the position of the cutting tools, the temperature profile as well as the state of wear and power consumption. Process data can be accessed and analyzed via remote data query.

Crushed variety of applications from sausage products to pet food

The modular model series of Handtmann Inotec fine shredders can be flexibly adapted to the needs of medium-sized and industrial companies: variable hopper sizes, inline fine shredders and vacuum fine shredders in a performance range of 3 to 15 tons per hour can be configured. Depending on the product and the required power, the cutting system, perforated plate and cutter head variants as well as various other options such as frequency converters and temperature control can be individually configured. Individualized variants for special applications are also available. These include, among other things, models with round funnels and feed screws for viscous and highly viscous product masses. Tough and non-flowing products can be processed either in round hopper machines using the integrated active feed aid or using a combination of inline fine shredder and feed pump. The vacuum shredders are optimized for integration into overall lines with a focus on mono products. Emulsification under a process vacuum with integrated meat ventilation is suitable for particularly compact and color-stable products with a longer shelf life. In principle, all fine shredder models can be used as a standalone machine or easily integrated into existing production chains with bowl cutters or horizontal mixers.
