Ripening culture for long-term matured taste in no time

Raw sausage - the supreme discipline of sausage making. A raw sausage specialty unfolds its full taste in particular through the individual maturing and storage. This natural process, however, costs valuable time and money.
The Kurt van Hees Research Fund has now been able to find a new way for Mediterranean-Mediterranean products such as cured ham or salami. With PRIMAL® SK Royal Rapid M, a ripening culture for Mediterranean specialties has been developed that enhances the mild, full-bodied taste profile of long-term matured raw sausage produced in the shortest possible time. The use of flavor enhancers, aromas or noble mold cultures is not necessary.

It is a new process technology in starter culture production in which yeasts are enriched in a special nutrient medium, where develop the typical flavor components. Spray-dried, the yeast fermentate is mixed together with Laktobacillus curvatus and Staphylococcus carnosus and packaged. The ripening culture achieves a fast mild acidification within 24 hours with a stable color formation and color retention. This means a safe pH-value throughout the manufacturing process. In conjunction with the corresponding ripening mixture PRIMAL® Select oGAF, the flavor profile of a long-term matured raw sausage is completed. Through the specific selection of germ-free spice extracts, the ripening culture unfolds its full potential for successful production without a bad taste.

With the new ripening culture PRIMAL® SK Royal Rapid M, VAN HEES has taken an important step in the field of clean label products. The major retail chains are increasingly demanding more clean-label products from their suppliers, if possible by largely eliminating additives, flavor enhancers, colors and aromas. In order to meet these requirements, but at the same time to ensure the durability and safety as well as the fresh taste of food, innovative ways must be taken. VAN HEES has a great future for the use of alternative raw materials, with spices playing a central role.
