RAPS launches All-in-One Compound

Kulmbach, April 2023: The spice expert RAPS has developed the all-in-one compound Easy Cheesy in order to stock the counter with meatless grilled products in an uncomplicated way. Butchers only need two more ingredients to make grilled cheese quickly and easily. Delicately melting, it ensures a pleasant mouthfeel without squeaking. In addition to the basic recipe, RAPS offers creative recipe suggestions and suitable plastic casings that are suitable for filling the cheese mass and for presentation.

With the new compound, butchers can produce grilled cheese in no time at all. The basic recipe is based on Gouda, but can also be used with any other type of cheese. Together with the Easy Cheesy mixture and water, a fine emulsion is created in the cutter. Filled into a long roll in multi-layer plastic casings from RAPS, the cheese mass is scalded at 80°C to a core temperature of 76°C. In the final manufacturing step, the roll is cooled in a water bath and then cut into slices. Prepared on the grill or in the pan, the grilled cheese becomes nice and crispy on the outside. However, the inside remains soft, which means that there are no squeaking noises when eating.

Numerous recipe ideas for varied barbecue evenings
The recipe can be refined as desired: other types of cheese such as Emmental intensify the taste; with spices, herbs, vegetables or fruits, unusual creations are created. The recipe app myRAzept offers many suggestions for conjuring up delicious grilled cheese preparations with the compound. For example, an exotic fruity cheese is created with mango chutney or a particularly hearty version with Grana Padano cheese.
