Anuga presents the top innovations for 2023

From October 7th to 11th, 2023, the international food and beverage industry will meet again at Anuga in Cologne. Under the guiding theme of “Sustainable Growth”, more than 7.800 exhibitors from 118 countries will present a variety of products at 10 trade fairs over the next five days. New trends and international product innovations are of particular interest.

The Anuga taste Innovation Show is the central stage for the top innovations at Anuga 2023. It is considered a trend barometer and source of inspiration for the global food business. Selected by a jury of international specialist journalists and market research analysts, the most important innovations from Anuga will be presented to trade visitors and media representatives. A total of 689 companies with more than 2.200 ideas applied to be included in the special show. The jury selected 68 products and concepts that were convincing in terms of ideas, innovation, sustainability and creative implementation - across the various Anuga trade fairs. In addition, ten products stood out as particularly innovative.

  • Dried mushrooms and mixes from VG Fryer Do-o. (Croatia)
  • Chica Mexicana Tortilla Wheat Beer from Leighton Foods (Denmark)

This year's new products show one thing above all: alternative proteins, clean label products and products with additional health benefits are the focus. Around plant-based and clean label products The exhibitors offer soups made from legumes, minerals and proteins and 100 percent natural ingredients, vegan egg or protein substitutes or handmade plantuccini, a plant-based interpretation of cantuccini.

Around alternative protein products The focus at Anuga 2023 is on fish alternatives. Whether alternative crab patties, seafood or fish, the producers rely on plant-based proteins and fiber. New yogurt alternatives made from apricot kernels or oat dressing are also among the innovations at the trade fair.

Another focus is Innovations with additional health benefits. In the beverage sector, the focus is on functional ingredients and natural, plant-based ingredients from sustainable cultivation. In order to reach younger consumer groups, the exhibitors at Anuga are showing drinks with striking colors and exotic flavors or glitter. In addition to citrus, floral herbal aromas such as hibiscus, jasmine, rose and elderflower are very popular in both hot and cold drinks. Non-alcoholic versions also continue to be an important trend, especially for beer and wine. There are also new upcycling products such as a tortilla beer that is brewed from leftover tortillas.

When it comes to the subject fermentation the Anuga taste Innovation Show offers, for example, products such as mushroom chili or a fruit soda drink made from fermented cucumber juice.

Creative ideas are based on Halloween, for example. This is how a company offers one black liver cheese.
