Staphylococci in long-matured Iberian raw sausages

Source: Food Microbiology 25 (2008), 676-682.

Researchers at the Spanish University of Extremadura in Badajoz carried out a study on the occurrence of staphylococci in long-matured Iberian raw sausages. The sausages are made in the Extremadura region using traditional technologies and without the addition of starter cultures. This enables the meat's own microorganisms to multiply, which among other things play an important role in the development of aroma, texture, nutritional value and safety. The type and number of staphylococci are influenced by the manufacturing conditions, in particular by the pH and aw values. With their enzymes, catalase and nitrate reductase, they counteract rancidity and promote the development of the typical red salt color. They also play a role in the formation of aromas.

Atlas on resistant pathogens and antibiotic consumption for Germany published

BVL, Paul Ehrlich Society and Freiburg University Hospital present antibiotic resistance atlas "GERMAP 2008" - with download link

Numerous bacterial pathogens such as Staphylococcus aureus, Escherichia coli and enterococci have become less sensitive to antibiotics, making the diseases they cause in humans and animals more difficult to treat. This is the result of a joint publication presented in Bonn by the Federal Office for Consumer Protection and Food Safety, the Paul Ehrlich Society for Chemotherapy and Infectious Diseases at the Freiburg University Medical Center. With the presented antibiotic resistance and consumption atlas, information on the frequency of resistance of bacterial pathogens and the consumption of antibiotics in human and veterinary medicine is available for the first time in Germany. The atlas is a first step towards assessing the risks of existing and potential development of resistance and developing recommendations for the treatment of humans and animals with antibiotics.

Better memory without REM sleep?

How to sleep properly

Sleep promotes memory formation and for a long time it was thought that this happened in REM sleep when one was dreaming. Scientists from the Universities of Basel and Lübeck have discovered that pharmacological suppression of sleep with rapid eye movements does not interfere with memory formation, but promotes it. In doing so, they refute the REM sleep-memory hypothesis. The results were published by the scientific journal "Nature Neuroscience".
